MEATLESS CHILI

Ingredients

  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 T olive oil
  • 1/2 cup shredded or julienne carrots
  • 1 can stewed tomatoes
  • 1 can diced tomatoes
  • 2 cans black beans, drained
  • 1/2-1 package chili seasoning mix
  • 1 T chopped parsley
  • Saute onions and garlic in oil in a pan large enough for remaining ingredients. Add carrots, tomatoes, beans, seasoning mix and parsley. Cook on medium heat for 10-15 minutes.
